Also known as Ratatouille

Ingredients

  • 1-2 tsp goulash paprikash
  • 2 cups water
  • 1 tbs olive oil
  • Zucchini, sliced
  • Eggplant, large dice
  • Onion, sliced
  • Tomato, diced

Instructions

  1. Make broth by mixing goulash paprikash, water and olive oil in your pot.
  2. Bring to a boil, add the vegetables bring back to a boil, simmer for 10-20 minutes until the vegetables are tender. Enjoy!

Tips

Other variations: Hungarian Bell Peppers (use bell peppers instead of summer vegetables)
