A great way to use your leftover charoset for a delicious and easy dinner!
Ingredients
- charoset
- 1 + 1/4 onion
- 1 Lb ground chuck
- 1 Lb ground lamb
- 1 cup bread crumbs or matzo meal
- 2 eggs
- 1/2 tsp garlic
- 1/2 tsp salt
- 1/4 tsp ground pepper
Instructions
- Dice and sauté one onion until it's soft and caramelized
- Incorporate your leftover charoset and bring to a simmer. If you need more liquid, add some vegetable stock, wine or water.
- In a medium-large bowl combine meat with bread crumbs or matzo meal
- In a separate bowl, puree eggs, 1/4 onion & seasonings with an immersion blender
- Combine meat and egg mixture and allow to sit for 5 minutes.
- Shape your meatballs and simmer until cooked through
- Garnish with parsley and salt to taste!
Tips
Serve with mashed potatoes and salad!
