A great way to use your leftover charoset for a delicious and easy dinner!


  • charoset
  • 1 + 1/4 onion
  • 1 Lb ground chuck
  • 1 Lb ground lamb
  • 1 cup bread crumbs or matzo meal
  • 2 eggs
  • 1/2 tsp garlic
  • 1/2 tsp salt
  • 1/4 tsp ground pepper


  1. Dice and sauté one onion until it's soft and caramelized
  2. Incorporate your leftover charoset and bring to a simmer. If you need more liquid, add some vegetable stock, wine or water.
  3. In a medium-large bowl combine meat with bread crumbs or matzo meal
  4. In a separate bowl, puree eggs, 1/4 onion & seasonings with an immersion blender
  5. Combine meat and egg mixture and allow to sit for 5 minutes.
  6. Shape your meatballs and simmer until cooked through
  7. Garnish with parsley and salt to taste!


Serve with mashed potatoes and salad!
